Ingredients Cauliflower Au Gratin
6 Tbsp. butter or margarine
1 to 2 garlic cloves, minced
1 head cauliflower, broken into florets
1 V2 c. whipping cream
1 c. (4 to 6 oz.) shredded Swiss cheese
4 oz. cooked ham, chopped
1/4  tsp. salt
2 Tbsp. all-purpose flour
pinch of cayenne pepper
pepper to taste
2 to 3 Tbsp. chopped fresh parsley
Melt butter in a large skillet. Saute garlic and ham for 2 minutes. Add cauliflower and cook just until crisp-tender. Combine flour and cream; stir into skillet and blend well. Add salt, pepper and cayenne pepper. Cook; stir until thickened and bubbly; cook stir 1 minute more. Pour into a 2-quart baking dish. Sprinkle with cheese. Place under a preheated broiler until lightly browned, about 2 to 4 minutes. Sprinkle with parsley. Serve immediately. Makes 6 to 8 servings.
