Ingredients Sweet and Sour Chicken
1(20 oz.) can pineapple chunks in juice.
1/2 c. firmly packed brown sugar
1/4 c. cornstarch
1/2 tsp. ground ginger
1/2 c. cider vinegar
¼ c. soy sauce
1 ¼ c. green pepper strips
2 c. cubed cooked chicken
1 c. sliced onion
1 c. sliced carrot
Drain pineapple, saving juice; add enough water to make 2 ½cups. Combine brown sugar, cornstarch and ginger in 12-inch skillet. Gradually stir in juice, water, vinegar and soy sauce. Cook over high heat, stirring constantly, until mixture comes to a boil, about 6 minutes. Add pineapple chunks, green pepper, carrots, chicken and onion. Reduce heat to low. Cook and simmer 10 minutes or until the vegetables are tender-crisp. Serve with rice.
