Ingredients WEST TEXAS JALAPENO CORNBREAD
3 c. cornbread mix
1 2/3
c. milk
1 large can creamed corn
7 jalapeno peppers, seeded and chopped
3 beaten eggs
1/2 c. cooking oil
1 large chopped onion
1 1/2 c. grated Longhorn cheese (mild Cheddar will work)

Mix all together and bake in a 13 x 9-inch greased pan. Bake at 425 until done.

I use a large cast-iron skillet and serve straight from it. A Pyrex dish makes for easy clean-up. This is really great with a grilled steak and Ranch beans with some freshly made salsa for a sauce and a dip. I’m not sure why it’s called "West Texas" ‘cause I got the recipe from Wyoming.
